Cucumber-Yogurt-Mint Soup
Prep: 20 minutes
Chill: 2 hours

Ingredients
1 large cucumber
1 8-ounce carton plain low-fat yogurt
1 tablespoon lime juice
1 teaspoon honey
1/2 teaspoon ground cumin
1/4 teaspoon salt
2 tablespoons milk (optional)
1/3 cup snipped fresh mint
Fresh mint sprigs

Directions
1. Peel the cucumber, then cut in half lengthwise. Scoop out seeds and discard. Cut cucumber into 1/2-inch-thick slices.
2. In a blender container or food processor combine cucumber, yogurt, lime juice, honey, cumin, and salt. Cover and blend or process until smooth. Blend in milk, if desired. Stir in snipped mint. Cover and chill 2 to 24 hours. Stir before serving. Garnish with fresh mint sprigs. Makes 4 side-dish servings.


Fruit Blend Soup
1 cup water or pineapple juice
1/2 cup sugar
dash of salt
3-4 tsp. Minute Tapioca
1 6oz. can frozen orange juice
1 10oz. pkg. frozen strawberries
1 lg. can peaches, cut up
1 cup peach juice
1 can mandarin oranges, drained
1 can pineapple chunks, drained
2-3 bananas

Directions
Cook the water/pineapple juice, sugar, salt, and Tapioca 7-10 minutes in the Microwave until real thick. Add the frozen orange juice and strawberries. Let cool. Then add the remaining ingredients except the bananas. Before serving, add the sliced bananas!


Avocado Gazpacho Souper Soup
Preparation Time: 20-30 minutes -- Serves: 6-8

2 lg. cucumbers
3 cups chicken broth
1 tsp. tabasco
1/4 cup cilantro, finely packed
juice of 1 lime
2 ripe avocados
1/4 tsp. salt, to taste
6-8 green onions, with tops
garlic or spice croutons

Directions
Peel and cut one cucumber into chunks and process with 2 cups of the broth, lime juice, salt and tabasco.

Pit, peel and process the avocados with the pureed mixture and 1/3 cup of the broth. Pulse, process briefly to coarsely puree avocado, leaving some chunks. Chill at least two hours.

Before serving, dice green onions. Peel, seed and chop the second cumcumber.

Pour into bowls and garnish with croutons and fresh cilantro sprigs.
